There are so many varieties of chilli peppers around the world, and depending upon the regions they are grown defines the variety, shape, colour and taste. The chilli is believed to have originally come from the Americas, domesticated roughly around 7500BC in Ecuador. Because of the vast usage of chillies in Asian cooking, some naturally assume they originate from the continent, but this is not the case.

It is believed that the Spanish brought chillies to Asia in the 16th and 17th centuries during their colonisation period. Countries such as the Philippines, Japan, Korea, China and India were introduced to the chilli during these times.

The small green chillies are only finger-length in size, but they can pack a serious punch. The smaller the chilli, the spicier the flavour. People naturally assume that larger chillies would pack more of a punch than smaller varieties, but this is not the case.

Aside being used as a condiments alongside fish sauce, green chillies/peppers can be dried, ground and then used in a variety of different ways. The dried green chillies are used in a variety of curry powders and pastes. The powders and pastes are then used when making curries such as Thai Green Curry and Massaman Curry.

There are also many varieties of pastes, which are used separately when making a number of Thai dishes. Thai people love their chillies, there is no denying that. This small but flavoursome vegetable is a permanent fixture in Thai kitchens and those across the world. Cooking with chillies can create hundreds of tasty dishes with many variations, just like the vegetable itself.
